Barrell Dovetail is a blended whiskey produced by Barrell Craft Spirits.
First released in late 2018, Dovetail is a complex blend made up of two primary components:
- a 10-year old whiskey sourced from MGP in Indiana and finished in Dunn Vineyards Cabernet barrels
- an 11-year bourbon sourced from Cascade Hollow in Tennessee and finished in black strap rum casks and LBV Port Pipes
Dovetail is a batched product that is released at cask strength, so there are variations in proof between batches. It is blended to taste for a consistent flavor profile.
We spent almost a year perfecting the blend for Barrell Dovetail, honing the interplay between the various components in much the same way a cabinetmaker fine-tunes the fit between pin and tail.
